I was looking online to find a recipe to make today with ingredient I had in my house. After I found this I decided I would make it tomorrow instead for my dad and boyfriend to eat with me. It looks amazing! The recipe is easy to follow and should be fun to make. I'm sure it will taste fabulous!

My husband and I actully used your recipe but we added fresh garlic, mushrooms, tomato sauce and some additional seasonings. This made the perfect dish. I loved it!! I had my sister, my niece and a friend over for dinner and they all loved it as well. My daughter (14) is a very picky eater, but she also loved the dish!! Thank you so much for sharing your recipe!!

I made this tonight and it was delish! I had salmon and spinach in the fridge and finally found the right recipe. The only thing I changed was to infuse a clove of garlic in the butter while it melts, removed and continued with the recipe. Boyfriend and I are looking for ways to incorporate more fish/seafood into our diets and this one won both of us over. Delightful change from the norm.

Just wanted to let you know that I made this and it was fabulous! Since I did not have heavy cream, I improvised with whole milk and 2 tablespoons of whipped cream cheese to thicken it up. Worked great. Also, I used salmon that already had the skin removed and pan-seared it just as you did above. The final dish was perfection - light, yet satisfying and tasty. Topped it with roughly chopped walnuts since I like a bit of crunch. Delicious!

Fantastic looking pasta guys! Tres bien. I wish I was there to taste everything you make. Que Bueno. Can I request some more Mexican dishes in the near future? Maybe a feature with a guest contributor, like perhaps Austin's famous steak fajitas? Yum.
Keep on keepin' on.
